Christmas is here. A time to celebrate, visit each other, cook delicious big meals and enjoy each other’s company whilst eating and chatting. I’d have mentioned gift sharing however we Africans don’t really focus our Christmas activities on giving and receiving gifts. Am I right or am I right? Personally I don’t recall ever receiving a Christmas gift over the years.

Nonetheless I got new clothes every Christmas with clear instructions to only don them on Christmas day to church. Any time I would ask for more gifts, I would be told ‘si umekula yako yote, unataka nini tena’ (You have eaten to your satisfaction, what else would you ask for?) This Christmas though I am gifting you guys with the perfect holiday recipe, Maryland Fried Chicken. Prepare this meal with this fried rice made healthy for friends and family to make it a memorable meal.

How to make Maryland Fried Chicken

Maryland fried chicken in its most basic form is chicken (drumsticks, wings, breasts or legs) floured, salted, peppered and pan-fried to golden brown. Resulting to lip smackingly delicious chicken; crispy, salty, moist and savory. The perfect holiday meal if you ask me.

This recipe also includes bread crumbs. If you have never tried adding bread crumbs on chicken Maryland or fried chicken for that matter, I am here to tell ya that it is quite an upgrade. Bread crumbs can easily be found in stores near you packaged in various sizes. If you however can’t seem to find them, you can skip them in the preparation.

Swap-stitutes (Swaps and substitutes)

  • You can use melted butter, oil or yogurt in place of eggs
  • As mentioned above, you can skip the bread crumbs

Lip smackingly delicious chicken floured, salted, peppered and pan-fried to golden brown.
Ingredients
  • 2 Eggs
  • 6 Pieces Chicken Wings, Thighs or Breasts or a whole chicken cut to pieces
  • 4 tablespoons all purpose flour
  • 1 generous pinch salt
  • 1 generous pinch black pepper
  • 1 pinch sugar
  • 1 tablespoon Paprika
  • 100 gm Bread Crumbs
  • Oil to fry
Instructions
  1. Crack eggs in a bowl and whisk with a fork
  2. In another bowl, mix flour, salt, black pepper and paprika
  3. In a third bowl, put the breadcrumbs.
  4. Take a piece of chicken, dip it in the flour mixture to cover all sides, shake off any excess then dip this floured chicken in the egg to cover all sides.
  5. Dip the egg coated chicken piece in the bread crumbs to cover all sides and set on a plate
  6. Repeat step 4 and 5 for the remaining pieces
  7. In a large non stick pan, heat oil till hot enough to fry the chicken. The oil should be just enough to cover two thirds of the chicken pieces
  8. Fry the chicken pieces for about 6 minutes on each side or until the crumbs are nicely browned
