Behold! The most green spaghetti you will ever come across.

Friends this might turn out to be one of the most delicious spaghetti meals you’ve ever had. Talk of rich creamy avocado consequently coupled with thick, smooth and tangy yogurt. Mixed with ground black pepper and freshly squeezed lime juice and finally mixed in  with your favorite spaghetti. As a result, you get a burst of different  sorts of flavor exploding in your mouth. Surely tastes like paradise!

Kids are back for the holidays

The holidays are here. Sounds of joy, piercing shrills, annoying howls, loud bursts of laughter and a generally noisy neighborhood will instantly let you know that the kids are back home.

I don’t know if this applies to your area, but in most localities there usually is that one, always noisy, house with like a hundred little kids in it. The hood is therefore never quiet as the little ones of that house are always screaming and yelling up and down. Likewise, in our neighborhood exists such a house and… It’s ours. Yeey!

I have four siblings, a niece, a nephew and two cousins that have come visiting. 8 little human beings, if you are counting. All under one roof and aged between 1 and 15 years. You therefore can imagine the chaos, squeals, arguments, cries and commotion emanating from this little creatures.

What of the meals in our home? They just don’t have to be kid friendly; they need to be super kid friendly. In contrast, make something they won’t like and we are back to the squeals and kicks. This meal however was received very well the very first time I made it and it has grown to be one of their favorites.

Picky eaters will love it too

Picky eaters among kids are the worst. If you are wondering who picky eaters are, I’ll explain in very simple terms. Picky eaters are selective about what they eat. We do have one in our home. A girl aged 8. With her every meal is a battle.

The most delicious dinner, for instance, might be prepared, appealing to the eyes, nose and mouth. It is then served; everyone at the table is digging in greedily enjoying themselves. A few minutes later, taking a look at the picky eater, she is still staring down at her plate, a disgusted look written all over her face. She turns to everybody else and again makes the disgusted face. Perhaps wondering what kind of human beings would gladly enjoy eating beans. (I have a feeling some of you that are picky eaters frowned right there. Immediately I mentioned beans)

Back to this picky eater of ours, she won’t eat at all despite being nagged to. She instead resorts to eating the bread she has been eating all day long. (Picky bread eaters, I can see you frowning)

This meal however was loved by our picky eater (who dislikes spaghetti FYI). Yogurt is the one ingredient that got her having the first bite. And with a tasty meal like this, it only takes one bite for one to be hooked. Next thing you know she has cleared her plate and is asking for more.

Avocado and yogurt sauce

The main anchor in this meal is avocado and yogurt sauce. You make it by first mashing your avocado in a bowl to your preferable texture.  You then stir in yogurt, lime juice, salt and black pepper. Don’t taste this mixture however. It is highly addictive and delicious. You might end up eating the whole batch. (Ask me how I know)

Spaghetti in Avocado and Yogurt Sauce

Serves: 2-3
Spaghetti meets avocado and yogurt in this delicious meal that is ready in just under 30 minutes.
  • 200 grams Spaghetti
  • 1 large ripe avocado
  • 400 ml Greek yogurt (see note 1)
  • 3 Tbsp freshly squeezed lime juice
  • ½ tsp salt
  • ½ tsp black pepper
  • Olive oil
  • 3 onions diced
  • 4 garlic cloves mashed
  • Cilantro roughly chopped
  1. Cook the spaghetti according to the instructions on the package and set aside
  2. Meanwhile mash the avocado in a bowl with a fork. Stir in the yogurt, lime juice, salt and black pepper and set aside (see note 2)
  3. In a large sauce pan, heat some olive oil. Toss in the onions and let saute till the onions appear transparent, about 2-3 minutes
  4. Add in the garlic and saute for about a minute stirring occasionally
  5. Mix in the cooked spaghetti. Stir fry on low heat for 3 minutes
  6. Stir in the avocado mixture. Lightly sprinkle the chopped cilantro and serve immediately
1. Regular yogurt will do except Greek yogurt is more healthy 2. If the mixture appears to be too thick add a tablespoon of water or more
